I don't see any reason why you couldn't do it with a USB TV adapter. Hauppauge makes one, and I believe SnapStream sells it in a hardware/software bundle.
Regarding your satellite, just be aware that you will have to wire the TV Adapter to the Video/Audio Out jacks on the satellite receiver. You will then have to change channels on the satellite receiver itself.

Or make the DSS serial Cable and have Snasptream change the channel for you.
