is it possible to record a show by time? For instance I want to record 1 hour of a 2 hour movie, but then switch to another show.

As far as I know you can only do that manually using the web admin.

maybe I'm an idiot, but how can it be configured via admin mode?

I don't have the same web admin ui at the moment, but from web admin ui go to Recordings, "create a new Recording'. That screen is pretty self-evident.
